Ropp Jersey Cheese

Ropp Jersey Cheese in Normal, Ill. started manufacturing cheese in 2006. This operation is owned and operated by a 5th generation family who dreamed of starting an on-farm cheese processing facility and retail store. Production agriculture serves as a vital fabric in their everyday lives. Since many children think that milk comes from the store, the Ropp’s wanted to create a place where families could make the farm to table connection. The Ropp Family shares their passion, knowledge and farm heritage by opening their operation up to general public throughout out the year.

They started the milking operation with 55 registered Jersey cows. The Ropp’s selected the Jersey breed of cow for its smaller frame, butterscotch color, and ability to produce a much creamier milk. The Jersey milk has a consistently higher protein and calcium content.

Ropp Jersey Cheese makes over 40 different varieties of cheddar cheese, muenster cheese, brick cheese, hand-dipped ricotta cheese and cheddar bleu cheese available in 1/2 lb to 40 lb packages. The cheddar flavors range from Bacon, Bacon Garlic, Bacon Garlic Horseradish, Bacon Ranch, Black Olive, Brick, Cajun, Caraway, Caribbean, Cheddar Blue, Dill, Garlic, Garlic Pepper, Green Olive, Green Onion, Habanero, Honey Habanero, Horseradish, Horseradish Onion, Hot Giardeniera, Jalapeno, Lemon Pepper, to Pepperoni to name a few.

Ropp Jersey Cheese is the first in Illinois to build and operate a Cheese-On-Wheels®: an on-farm dairy processing plant. The cheese making process is all done on-farm in a self contained cheese processing facility where one side of plant has windows to showcase the process on educational tours.

The Ropp family invites groups out to tour the farm and maybe even milk a cow or two. They offer working farm, cheese plant, retail store and educational tours, along with special event weekends like Christmas on the farm, June dairy month and fall harvest. Check out their website at www.roppcheese.com and visit the Ropp’s on the farm. ROPP JERSEY CHEESE, LLC

FOODEX Japan 2008

Tokyo, Japan

ONLY 1 BOOTH LEFT!

The Illinois Department of Agriculture will be sponsoring an Illinois stand within the U.S. Pavilion at FOODEX Japan 2008. The show will be held March 11-14, 2008, at Nippon Convention Center (Makuhari Messe) in Tokyo. FOODEX is the largest food and beverage show in Asia, which serves Japan’s $600 billion food market. FOODEX is also attracting an increasingly regional visitor profile, thus providing an outstanding opportunity for promoting your products to other Asian markets. Japan is an $8 billion export market for U.S. food, beverage, and seafood products. With a food self-sufficiency rate of only 40%, Japan is one of the most import-dependent markets in the world. As a result, high Japanese demand for foreign food and beverage products remains a constant, regardless of overall market conditions. Asia-wide trends begin in Japan. For foreign companies, entry into the Japanese market is often the first step to expansion across the entire Asia Pacific region.
