Kathy’s Kitchen

A little bit about us:

Kathy’s Kitchen is owned and operated by Daryl and Kathy Keylor in Virginia, IL. The art of preserving the produce from the garden and the gatherings from nature grew from necessity, to a hobby and then to a business. Old recipes from family and friends are the basis for the “just like Grandmas” taste in every jar.

For many years (over 30) my hobby has been to enter the preserved items in competition and have won a sizeable quantity of ribbons and trophies at the Illinois State Fair. The Blue Ribbon Chips are a sweet pickle that are named Blue Ribbon because they have won so many at the State Fair.

When my husband and I decided to build the production kitchen and sell commercially, we began with the intent of preserving only fruits and vegetables we either raised or gathered ourselves, but the business has outgrown our capabilities, although we still do grow as much as we can ourselves.

We have found that the real cornerstone to quality in the jar begins with quality ingredients. We use fresh fruits and vegetables and no added flavorings or fillers. We use only pure natural sugar for sweetening. Actual spices, not flavorings or extracts are the visible signs that the taste of our product is the real thing. We make about 100 different items, but only around 60 in quantities to wholesale.

Some of our products are described below:

True Chili Sauce is cooked down to a rich consistency. You’ll find Kathy’s Kitchen Chili Sauce is all you expected, no thickeners.

The Cinnamon Apple Jelly is an original recipe which blends two flavors that naturally go together (apple and cinnamon) into one great jelly.

The Vidalia Onion Relish is another recipe developed by Kathy’s Kitchen. It is definitely one of our most popular items. (Now our biggest problem is getting enough made while the Vidalia Onions are available.)

The Sweet Pepper Relish came about one year after a bumper crop of peppers, and was so well received it became a regular on our list of products.

The Sweet Pepper Jelly recipe was developed after many customers requested it. We make both red and green, depending on what color peppers we’re picking. You will notice that our pepper jelly is the natural color of peppers, no artificial coloring. It also has the full flavor of peppers, not just a bit of water with a few pieces of pepper. We use only the real juice of freshly squeezed peppers to make our pepper jelly.

As each of our ingredient labels states, Daryl and I put “a lot of hard work and pride” in our products. The word is spreading, business is growing, and right now wholesale to various stores wanting to specialize in “Homemade Quality” surpasses the retail.

Illinois State Fair - Illinois Products Promotion

Springfield, Illinois

Promote (and sell) your Illinois food products at the 2007 Illinois State Fair

Again this year, the Illinois Department of Agriculture, Bureau of Marketing & Promotion is coordinating “Illinois Products” food sampling and selling (selling is optional) during the 2007 Illinois State Fair. This year, the Illinois State Fair will be held August 10-19, 2007, in Springfield, IL. Up to eight companies can participate on each day.

Illinois food companies can sample and sell their products for any number of days that you choose. Your cost to participate is only 5% of your gross sales. (If you don’t sell, you don’t pay anything.)

If your company has a pre-packaged product(s), staff of the Division of Marketing will pass out the samples for you during the fair. We recommend that you provide a minimum of 1,500 samples (however, we will distribute any amount that you provide).

Food sampling/selling will be done in the Illinois Department of Agriculture tent (60 ft. x 90 ft.) located on the east side of the fairgrounds (near the Lincoln Stage). Food sampling/selling hours will be 10:00 a.m. – 6:00 p.m. each day. Admission onto the fairgrounds and parking are complimentary for participating company representatives. Refrigeration and a food preparation trailer will be available to participating companies at no cost. The tent is located in a “high traffic” area and consumer interest in this area has been very good in past years.

Illinois Products Demonstrations at the Illinois State Fair

Illinois State Fairgrounds
Springfield, Illinois

Within the Heartland area of the Illinois State Fair, the Illinois Department of Agriculture, Bureau of Marketing and Promotion (IDOA, M&P) coordinates the Gazebo area that spotlights Illinois companies and products with cooking demonstrations and subsequent samplings of the prepared recipes. This area has a very transient audience, but the sampling allows time to personally visit with people from all over Illinois about the company and its products. During last year's fair, there were an estimated 250 individuals that viewed each demonstration and sampled the prepared recipe.

The responses from those tasting the products were extremely positive. Most asked where they could purchase the products or get recipes that incorporated the products.

We are looking for Illinois companies that have products that they would like to demonstrate with a recipe or even several recipes and then sample the demonstrated recipe.

The Illinois State Fair is being held on the Illinois State Fairgrounds in Springfield from August 10 – 19, 2007. We will have seven scheduled times each day for demonstrations. Available times this year will be: 11 am, Noon, 1 pm, 2 pm, 3 pm, 4 pm and 5 pm.

Another option for companies that cannot send a representative is to have IDOA, M&P staff present the recipe demo and the samples. Your company product would need to be shipped to the Department in plenty of time for preparation. We would also need recipes, brochures, a list of retail outlets where the product is available and other related information to allow for a complete presentation to the audience.

Time slots will be filled on a first-come-first-served basis, so contact Delayne Reeves at 217/524-9129 or delayne.reeves@illinois.gov at your earliest convenience.
